Crunchy Salad with Lemon Tahini Dressing

Salad 

1 apple, chopped
1 teaspoon lemon juice
Purple cabbage, chopped
Carrots, chopped
Broccoli, chopped
1 cup shelled edamame
1/3 cup nuts and seeds (walnuts, pecans, almonds, sunflower seeds or pumpkin seeds) 

Dressing

1/3 cup water
1/3 cup tahini
¼ cup lemon juice
¼ teaspoon garlic powder
¼ teaspoon salt
1 ½ teaspoons honey or maple syrup
Cayenne pepper, to taste 

  1. Cut and combine all salad ingredients in a large bowl. (Note: you can substitute other vegetables, such as cauliflower, if you like, but the total amount should equal 7 cups of vegetables.)
  2. To a jar, add all the dressing ingredients. Put a lid on the jar and shake to combine.
  3. Toss everything together and enjoy.

Serving size: 1 cup

 This is wonderful as a side salad or a main dish. It’s a great way to increase your vegetable intake, has tons of fiber and protein, and tastes amazing!
